Raisin Bran Pancakes

I have so many boxes of Post Raisin Bran from all of the wonderful cereal sales going on at Albertsons lately. So, I found a recipe for pancakes and altered it a bit. We had them for dinner last night and they were so yummy! I think we will have them once a week!

Raisin Bran Pancakes


2 cups raisin bran cereal
1 cup buttermilk (1cup milk plus 1 tsp vinegar)
1 1/4 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/8 teaspoon salt
3/4 cup sugar
1/4 cup applesauce
1 egg( I used 1 Tbsp flax plus 3 Tbsp water as a substitute)

Combine raisin bran cereal and buttermilk: let stand for 5 minutes. Stir together flour, baking powder, cinnamon, baking soda and salt. In a large mixer bowl beat sugar and oil on medium speed of electric mixer about 30 seconds. Add
egg and beat till well combined. Alternately stir bran mixture and dry ingredients into beaten mixture just till moistened. Store in refrigerator, tightly covered for up to 2 weeks.

For pancakes: Stir in ½ cup milk. Spoon ½ cup at a time onto hot griddle. Cook 2 minutes on each side or until pancakes are done.

For muffins: You can spoon 1/3 cup batter into greased 6 ounce custard cup. If desired, top with 2 thin apple slices, then a mixture of 1 teaspoon brown sugar and dash ground cinnamon. Bake in a 350 degree oven for 18-20 minutes or till golden. Makes 18 muffins.
